Slow Cooker Recipes for Fall

Make these tasty slow cooker recipes using your favorite fall fruits and vegetables.

Fall is the time for warm, hearty meals -- and what better way to prepare them than by using your slow cooker? Simmer these fall-ingredient (think pumpkins, apples and squash) slow cooker recipes in your pot, and you’ll stay warm into the winter. Apple Crumble Crock-Pot Recipe Ingredients: 4-5 cooking apples, peeled and sliced 1/2 cup brown sugar, firmly packed 1/2 cup flour  3/4 cup rolled oats 1 teaspoon ground nutmeg 1 teaspoon ground cinnamon 4 tablespoons butter, softened Directions: Lightly butter the Crock-Pot and lay the apple slices at the bottom of the pot. Combine the sugar, flour, rolled oats, nutmeg and cinnamon, and cut in the butter. Sprinkle the topping over the base of apples. Cook on low or auto for 3-5 hours. Slow Cooker…

Billy’s Chili Wins Again

Duluth City Council members offer samplings of their chili at the city’s second annual cook-off.

Duluth City Councilman Billy Jones retained his championship title at the second annual City Council Chili Cook-off Thursday (Aug. 16) on the Duluth Town Green. He got to keep the championship apron. This year Jones prepared mild turkey chili and spicy Buffalo chicken chili and offered a selection of toppings including blue cheese, sour cream, shredded cheese, oyster crackers, Fritos and sliced jalapenos. And he set out a couple of bottles of hot sauce in case his chili wasn’t piquant enough. His venison chili was judged the best in 2011. Jones was presented with a container filled with gifts from local merchants as the 2012 chili cook-off winner. Jones also was given a trophy to keep the one he won last year company. Amy and Josh Shirley enjoy having friends over to watch football, and when they do they like to serve this easy slow-cooker chili.

Amy Shirley and her husband Josh have lived in Duluth for four years. This past year they moved from an apartment into a house, and one thing they enjoy very much are the sidewalks in and around the downtown area. “I enjoy walking to the library and downtown," explains Shirley. “There’s always something going on downtown like the Friday night movies on the green.” Since she was a girl, Shirley has enjoyed cooking and experimenting with new food combinations. She says she learned a lot about cooking from her mom, who was always good at coming up with new and good recipe ideas.  During the fall the Shirleys spend many weekends getting together with friends and watching football.
