I know, I know. The last thing most of us need this holiday season is another way to shrink our jeans, yet this recipe is just too good not to share.
I should probably be exercising right this very minute, but I'd rather enjoy a cup of coffee and a slice of this delicious pie. That's right. I'm having pie. In the middle of the day. For absolutely no reason at all. Jealous much?
No need to be jealous. With just a few ingredients and a few minutes of your time, you too can be spooning this sinfully rich pie into your mouth and savoring its luscious chocolately-ness (that's a word, right?).
To somewhat alleviate my conscience and spare my waistline, I have slimmed up the ingredients from the original recipe which was part of a Keebler pie crust ad I tore out of a Southern Living magazine 20 years or so ago. Still, I'm not going to lie, health food this isn't. Enjoy it anyway. I know I am!
1 1/2 cups of semi-sweet chocolate morsels
1/3 cup of water
1 8-ounce package of light cream cheese (I don't recommend fat free, but who does?)
1/4 cup sugar
1 12-ounce tub of fat-free or light Cool Whip
1 Keebler chocolate graham cracker pie crust (you can use a regular graham cracker pie crust, I just prefer the chocolate one)
Middle layer: Pecans, crumbled cookies, crushed peppermints - whatever you like
Put the chocolate morsels and water in a saucepan over low heat and stir until melted.
Beat cream cheese and sugar until smooth, add melted chocolate and beat until well mixed.
Fold in the Cool Whip.
Place half the filling in the pie crust. Add a layer of nuts, candies or cookies (your choice - I prefer pecans, but crushed Oreos are great too) and then add the rest of the filling.
Chill until firm and serve.
