Improper Cooling, Other Violations Get Duluth Restaurant a 'U'

A Duluth area restaurant received a "65/U" rating and faces a compliance hearing after a recent inspection by the Georgia Department of Public Health.

Firehouse Subs Gwinnett Center at 1950 Satellite Boulevard, Suite 100 received the rating in an inspection on Monday, Sept. 30. Among the violations noted:

  • Violation of Code: [.04(6)(e) ] Sliced deli meat prepared that morning cooling in a malfunctioning prep cooler. Sliced tomatoes prepared that morning cooling in warm area of 3 door cooler (bottom right). Product did not cool to 41 deg. F within 4 hours of preparation. Product DISCARDED. Facility must cool from room temperature to 41 deg. F within 4 hrs via an effective cooling method. MONITOR COOLING PROCESS.  New Violation.
  • Violation of Code: [.07(6)(c) ] Multiple spray bottles of cleaning agent stored with food, or on prep table. Chemical relocated to an approved location. Poisonous or toxic materials shall be stored so they can not contaminate food, equipment, utensils, linens, and single-service and single-use articles.  Corrected On-Site.  New Violation.
The report also said the permit was suspended due to cold holding being marked out of compliance on three consecutive routine inspections. A compliance hearing was scheduled.

A follow-up inspection will be held in 3-10 days.
